One of my local customers spent the 1st half of her childhood living in a village adjacent to vast fields of industrial peppers being raised for capsaicin extraction. She cooks at least one meal a week with ghost peppers and eats habaneros or similar as a snack. Serranos are too mild for her. Her uncle is the same way.
