Default What to do with all the extra tomatoes

You can only eat and give away so many tomatoes....
What's the best way to freeze all the tomatoes coming in at the same time?
Blanch or simply quarter and freeze?

lucky you, i freeze them, 4 in a bag in a vacuum bag. I do not cut them.

Wash them, dry them off a bit and toss them in a zipper bag.

If you want to get fancy, put them on a cookie sheet to freeze then put in the zipper bag.

Be careful how many you put in a bag - they sound like billiard balls when you pick up the bag of frozen tomatoes - and will have roughly the same effect if you drop them on your toes

Instead of freezing, I cut them up and put them thru my Back to Basic Food Mill. This gives me Juice and pulp. The skins and seeds are expelled. Then it goes into the pot and I boil it down a bit and can it as juice. Boiling water bath is easy and fast. No worries about the power failing in the winter, etc.

With this juice, I can make sauces, salsa, or enjoy some fresh tomato juice. There are a myriad of other things that can be made, but the main thing is that I can enjoy those wonderful flavors "all winter long".

You can also roast some in the oven. The roasting recipes and directions are in other threads here at Tomatoville.

There's a lot more possibilities to preserving tomatoes than just freezing.

You could ship them to us, once again we're having a bad year with the wilts! As a gardener I have to be optimistic, and hope that next year I'll find the answer.
