Salsa Tomato
I am wondering what everyone's favorite tomato is to use in salsa. I like very mild salsa and my family is more of a medium mindset. Just trying to get final list of growouts this next season. I know the heat comes from the peppers but it also appears to me that a more mild or sweet tomato would make a more mild salsa? Any input would be appreciated!

Yellow tomatoes tend to be mild in taste. Or some of the low acid types like Roma. Golden Jubilee is very mild, borderline bland in my opinion. Great White is lovely and sweet. Maybe I didnt understand your question properly. I personally prefer the not-so-mild black and purple types. Purple Russian is a very sweet purple.

I use Grandma Mary's Paste, Opalka and Martino's Roma for salsa.
I don't like my salsa watery and these varieties hold up well and more importantly, taste good in salsa.

I agree with Mischka about using paste tomatoes for less juice.Here is a trick you might want to try. divide the salsa in the mild version just use the seeds and membrane putting a little in at a time to you reach your desired heat level.For the medium heat level use the meat and remaining seeds and membrane of the pepper.

I do a really odd one for salsa. I use 97L97 which is a bright orange paste type tomato that has 40X carotene. I use other varieties like Heidi, Eva Purple Ball, and Lyuda's Mom's Red Ukraine for about 80% of the tomato and 97L97 for the remainder. This gives an extra tart flavor to the salsa that I really like.
