Default onion question

Was going through old post on here see picture after picture of onions pulled that still have nice green tops that were still growing also see this on dixondale web site. wondering why anyone would pull them before the tops fell over on their own and done growing. Only thing I can think of is rain is comming but if they are still growing the the rain won't hurt them. Any thought on this???? What am I missing????
