Peach glazed BBQ-ed pork roast.
One pork roast, One quart Fredericksburg frozen peaches ( I have a ton of them) 1 ½ cups of sugar 1/2 cup water, gin, rum or vodka or whatever you have the most of. Put frozen peaches skin and all into a pot add water and sugar cover, thaw out take lid off and reduce a wee bit. Whilst doing so, put pork roast in (not on) the BBQ pit and let it get a good smoke ring. Back to peaches, After peaches are cooked down a wee bit put them into a blinder and blind the devil out of them until they are like apple butter. Slather peach butter (as this is what it really is) all over the pork roast a few times continue smoking until it is almost black. This will take hours so have plenty of refreshments on hand. Serve with smoked sausage and fresh baked sweet taters/yams with a little butter and salt. Enjoy, Worth |

I've been looking for a reason to fire up my smoker again! Better get some more refreshments, this may take hours.
