No thank you fa(s)t food. I do pass a Lick-a-Chick every once in a
while. Parking lot is always packed. Might be good.

FiestaMarket. That might be it. Used to get frozen Boudin there.

I'll make my Tamales and Boudin at some point between the two
holidays. Made the thick mixed pepper mash in Sept. Not sure
what it is called but it mixes in and flavors the shredded/chopped
pork. Red and green sauce done...all in the freezer.

I also cook the pork day before. With all done ahead, the tamale
making party is not such a task. So good. Been a holiday tradition
for many years.

And great homemade fast food for the freezer.

Spreading out the prep work, like you do, makes it fast and more fun. A "smear, load, roll and wrap" for lots of yummy tamales for everyone. Making tamales is not a hard thing, but can be a lot of fun.

Edit:

We'd often make pork, beef and chicken tamales at one get together.

I've done that before Imp. By the end of the 'party' I was so done.
Started mixing all the three meats together, ran out of mixed masa.
AND I made a vegetarian one as well.
It ended up rather delish. Used the melty queso cheese and veg stock
in the masa. A bit of super thin collard green ribbon bundle at the top
so we knew what was what.

Now we just try and simplify but I do like veg one. For us I don't need to
make a separate masa dough.

Now I want to make the Boudin the same time because the pork roasts
will be easier to do same time.

I've had Chick-fil-A twice, more to see what all the fuss was about than anything.

I think their secret is that their chicken is just that -- chicken. A boneless breast that's tender and juicy, and not overly salted, covered in spices, or slathered with sauce (although they do have a variety of sauces if you want to add any yourself). A nice change from anything the other fast food places pass off as chicken...

I other words, it's chicken that tastes like good chicken, with nothing to hide.

I like Chick-fil-A too but I hate the lines, my go to is Raising Cane's. I worked in a few of them replacing some light fixtures and the chicken is as homemade as you can get. All chicken and battered like you would at home.

Every location I did work for regardless the time of day the manager insisted we order something free and even when I told him I already ate he insisted I take some home. The company is legit and helps the community.

Don't forget to order extra Cane's Sauce!!!!

That Cane's sauce is almost exactly like the remoulade we make for crawfish, shrimp or crab boils. It goes good with boiled potatoes, mushrooms and sausage boiled in Louisiana brand crab and crawfish boil.

The test tamales came out fantastic.
Best I have had in a coons age and maybe longer.

The gelatin stock and lard from the roast went into the masa along with more lard and some water.
On top of that some of the juice from the simmering chili powder and arbol chili and cumin black pepper red pepper garlic powder and salt.
The meat was spiced up the same way.
In both of these I also added lime juice.
You wont be wanting to add any hot sauce or anything to these tamales for flavor or to make them hotter.
Nor will you have a problem with them being too dry like the store bought ones.

The first time we bought food from the Cane's here it was not good at all. But, after 6 months, we tried them again and they are pretty good. The meat is real meat, not mechanically separated and reformed into shapes and not over cooked.

I didn't think there was one near here. Looking at the map I see there's one just around the bend from the Wal-Mart I sometimes shop at. Have to give them a try.
