One of the most important things to keep in mind with Green Bee is that it ripens a bit slow, and you should not pick it early. It should, at a minimum, have a bit of yellow at the surface. Hints of deeper color often develop as well.

The Green Bee fruits in the photo are just right for picking and should last 2 months at room temperature.

Since it stays crunchy, might also be good pickled. Will have to try it that way, too.

I think pickling is a good idea, although I don't know anyone who has explored it.

Up to 17 sample packets spoke for, and 3 sample packets left.

Some ideas for using Green Bee fruits


Green Bee with cottage cheese (salt, pepper, olive oil and Okahijike saltwort)


Green Bee in mixed bowl dishes. The Green Bee in this lunch dish was plated 2.5 months after harvesting and 1 month after the restaurant bought them. They were stored at room temperature.


Green Bee Gazpacho. Lurking below are shrimp and avocado.


Green Bee in hot dishes -- this one has pork, pork sausage and couscous. Although they were added fresh to this dish, they can be grilled or smoked without turning to mush.


Green Bee in mixed summer salads -- adding flavor, texture and color diversity.
