Dwarf Project Canners?
It seems like every year I am looking for a better canner. I have tried a lot of them but never looked for one from the dwarf project. The requirements are a 5-7oz red tomato. It should be a highly productive determinate that ripens a lot of fruit at one time for efficient processing. It must be acidic enough (PH of 4.6 or less) to can without adding acid which changes the flavor. Most importantly it has to taste great. Enough sugar to balance the acid should result in an intense balanced flavor that holds up as a canned fruit, and tastes great fresh too. If there is a good candidate among the new dwarf tomatoes I would love to hear about it.

I am very interested in this answer, too. I received 9 dwarf varieties in the MMMM and am planting all of them, hoping to find a good productive canner.
