Default Production Schedule

Hi,
I have been trying to figure out a production schedule for my tomatoes, because my ultimate goal is to produce tomatoes everyday in a greenhouse all year long for stores. Right now I am starting just summer production for the next 4-5 years. So I was trying to figure out how many "seasons" one could have in the summer.

1. How long will a tomato plant produce good fruit out in field?
2. How long will a tomato plant produce good fruit in a greenhouse?
2. Does it affect production if I were to plant seedlings this week, plant another batch next week, and so forth.
3. what would be a good production schedule?
