Same here, if I followed what many people do in far better climates than my own I would never get a ripe tomato.
Starting them in April/May is unheard of where I am. People would laugh at you for starting them that late.

The only time I remove tomatoes from a truss is to enjoy fried green tomatoes early in the season. If I have a truss of 4 to 6 potentially large ones I remove 1-2 of the less good looking ones. This provides us with the green we love and the rest usually ripen to a nice size. But normally I leave them. I think it’s a personal choice as mentioned above. If you are making sauce then what difference does it make if you have 4 large or 6 slightly smaller? If you want slicers then it makes sense to remove one or two to encourage a larger size.

For the home gardener no reason to. For sales uniform tomato sells best so with big Beef for example I prune truss to 4 to avoid the smaller tomatoes.

Me too!! Gotta have those fried green tomatoes.
Snitching one here and there from clusters doesn't see to bother the plants one bit. Yesterday one of the local groceries wanted $1.69 lb for green tomatoes. I just smiled, knowing sooner or later I'll have some for free. I can wait.

Actually I does do it when I want larger fruits, but that's only because I want to show it off in "The very large tomato thread".

I have one negative experience with leaving all the flowers on the first vijan. Six normal flowers and one multifloora were on the first inflorescence on Brutus tomato. I am multifloora pruned, others stayed. Finally, I did not harvest anywhat tomato from the whole plant. The roots could not deliver enough calcium in one for so many tomatoes and all ended up with BER. Since then I limit the number of flowers in such large tomatoes.
