I tried just salt; no water, using this technique.

Unfortunately, I used the amount of salt appropriate for the brine. I also put a pinch of wine yeast.

Hmmmmm. Found this comparing lactobacillus vs SACCHAROMYCES CAREVISIAE in fermentation.
