Default Using an Instapot for tomato sauce

I love my Instant Pot! However, it IS a pressure cooker and when I cook my tomatoes to make sauce, I want to evaporate some of the liquid. A pressure cooker won't really do that if used as designed. However, it can be used as a regular pot without the lid on.
