Seeds, potting up and strange things

I started many of my seeds early due to my (much) anticipated trip to Alaska to see my first new grandbaby. My DH can be trusted to man the lights and water but I wanted them potted up even if it were a little too early. Aside from one of my cats chomping a few seedlings, the tomatoes went fairly well. I hope I didn't traumatize them too much since they didn't have their first true leaves yet.

My peppers are coming along but I did note that some of my jalapenos were strangely coiled. Almost like a pea tendril. I put them under the lights and they are straightening out but it was a little weird. Would this be any sign of trouble?

Lastly, while trolling the site I came across NCtomatoe's youtube videos on seed starting. While I have my own system for tomatoes, I saw that Craig started beet seed in trays. Craig, obviously you must have good results with this method? I always assumed that root veggies weren't a good choice to transplant but would be very happy to do so. One of my biggest problems are weeds and plan to be heavy-handed with any type of product to deter them. Beets are one of my favorites to can so it did perk my interest.

Beets unlike other root crops take to transplanting quite well.

Thanks Ray, I have some started in the garden but I may fill a flat with seed for a second sow if the weather will cooperate.
