Default Vitamix?

Slightly off subject. Most years I give the excess to various neighbors. Last year I kept several neighbors in fresh tomatoes most of the summer. A few got some beans, squash and eggplant too.

This year I'm planning to put up the excess, even though it will be many small batches.
I have a Vitamix. Has anyone tried just coring the tomatoes and putting them in a Vitamix to grind skin, seeds and pulp before cooking them down for sauce?

It would be a big timesaver if it works.

I use an electric mill and I do not loose much. I do run the contents of skin/seed bucket through the mill one time, after I am done with all tomatoes. I don't get that much pulp or juice running it through. I had a hand crank and it was about the same.

Not the best product on the planet, but it gets the job done. I end up with near zero lost juice/meat after running the "waste" through a 2nd time. Not that there's a whole lot left to squeeze out, but its fast and easy!

Did you notice the outside temperature on the display? That's probably why I was in the house taking pictures and not out in the yard tending to the plants.

You can get a reasonably inexpensive hand mill for about $70. Johnny's carries one that is decent.

Costoluto Genovese is an intensely flavored tomato. If you like them sweet, either grow some sweet tomatoes to add to the mix or else add some sugar when you process them. IMO, a combination of Opalka with Costoluto Genovese is pretty hard to beat flavorwise.

My mom had me use one of these for years it was a work house.
Then she got all of the credit.
We completed the operation by squeezing it through a cheese cloth.
Then like a goat I would eat the skins and seeds.
A good tomato mill or what ever you call them is off the hook for productivity and they get just about everything.

I own a Vitamix and while it does work fine, excess seeds will create a noticeable bitter taste in your sauce. Now, when I process, I don't worry about the core or skin but I do squeeze the liquid and most of the seeds out.

I'm also using Vitamix to blend the whole tomato to make sauce.
Didn't notice any bitterness though.

That picture makes me very sad - I'll bet he was sent to work tiny little areas in the coal mines where adult workers couldn't reach.

I know how you feel, I post this stuff from time to time to not only make jest but to let people know how lucky they are.
Child labor is still a horror in some countries.
