You can't go wrong the The Sausage Maker products. Len Poli does have some good recipes. I highly recommend The Sausage Maker's polish sausage seasoning and the book Great Sausage Recipes and Meat Curing by Rytek Kutas. He is the guy that started The Sausage Maker company and his book is known as the sausage and curing bible by people making a lot of sausage.

Bought the book mail order many moons ago.
I buy all of my stuff from them.
Rytek has passed away what a great guy.
Making sausage for the big boys now.
