I actually used to buy the canned white sauce but I guess it didn't sell fast enough so they quit stocking it along with so many of my favorite things.

What can I say I have been craving chocolate for months.
I finally broke down and made some with coconut oil and cocoa powder.

Yummmmm.....haven't tried making it with coconut oil before. Will have to try that. God knows coconut and chocolate go together....superbly.

I love making coconut oil chocolate! It isn't necessarily all that coconut-ty it depends on your coconut oil. The more refined it is the less coconut flavor you get. It's wonderful with coconut shreds, dried fruit and/or chopped, roasted nuts too. The only bad thing is that you have to keep it in the freezer or fridge. It melts at 75° or so. I keep mine in the freezer. Now I've got to go make some!

You do realize this is a homemade Magic Shell for ice cream too.
With it melting at room temperature all you have to do is put it in a squeeze bottle and well you know.

Mine doesn't taste like coconut at all and I keep it in the refrigerator.

There are two ways you can do this without using dairy.
One is to use cocoa butter and the other is to use coconut oil.

I dont measure anything but here is a start.
Use a 1 to 1 ration of coconut oil to cocoa powder I use the dark powder.
Use as much powdered sugar as you want to taste.
Start by heating the oil in a double boiler, I have one but you can use a small pan in a big pan of hot water.
mix in sifted powdered sugar and the cocoa powder and stir till the cows come home.
If you get even one drop of water in the chocolate it will seize up on you.
Take out of boiler and stir some more.
You cannot stir it too much.

Pour into molds and let cool at room temperature and then refrigerate.
Tempering chocolate is a whole other story and a bit complicated.

I hope this helped some.

My mom used a bit different recipe, it was the best chocolate I ever ate. Home made chocolate rocks. She added powdered milk to cocoa and other ingredients. After refrigerating it for a bit she rolled it into a truffles, coated with walnuts bits.

Finally had a bite of chocolate today. It was a bar, though, just a dark chocolate with fruit and nus... very good.

Whats for supper, Worth?

I went to the farm today, it poured rain while we trimmed the garlic in the packing shed. Then it cleared off when we had to cut lettuce for the market. And we washed and spun and bagged it for the market. And I hosed off a bunch of tubs and buckets and such in the sun in the yard and i got wetter than if I was out in the rain.
Then I took off the rubber clothes and picked some flowers for bouquets for the market.

We came back to my place with a couple bottles of wine and some veggies, S picked some more flowers while I boiled potatoes for N to make mashed, she made green salad with lettuce and peas and tomatoes and I made dressing with fresh dill and cilantro. I fried up pork chops with onions, seared a bit on the first side and then turned and seasoned with chopped up frozen hot pepper - this time it was Guerito peppers pretty hot - and the fried onions heaped over them while they cook, then salted hard before serving. And N steamed some broccoli as well.

Oh so good!

Sounds good.

I made 10 pounds of breakfast sausage today so I am having breakfast for supper.
Eggs toast and sausage.

Out of curiosity, that would have to be for an air compressor - right? lol I guess the pack was sealed under pressure
I had to edit because the gauge only goes to 100 PSI. For a pressure cooker - that's too high, but for an air compressor - it's kind of on the low end. I've seen carpenters, mechanics, and roofers set their air compressors at 120-140 PSI.

I've got two different versions of Tomato Bacon Jam on the stove simmering down right now. One spicy (with Hungarian Hot Peppers & Jalapeno Peppers) and the other without. I used triple smoked bacon and maple cured bacon in both. And I used Cherokee Purple, Carbon, Black Prince and Black from Tula for the maters. Will post pics when done putting it in jars later tonight.

Bower that sounded like a lot of work followed by a tasty dinner.

And Worth....nothing wrong with eating breakfast for supper.

My family celebrates birthdays in pairs usually, since there are so many of us. Today we're celebrating my aunt Jackie's and my aunt Debbie's birthdays, and I was in charge of the cake. I made white cake, cut into 4 layers, with vanilla custard and stewed strawberries between each layer. It's frosted with real whipped cream with a vanilla bean scraped into it, and Pirouette cookies line the sides. Fresh strawberries on top for color and decoration. Can't wait to have a slice!
