Ah crust upon meat... makes everything good. My mom sometimes makes a rabbit stew cooked in wine and crust goes only on top - so not exactly a pot pie but man is crust good with gravy!! Even if you serve it with a spoon.

In other news, I actually found some vanilla on special! Watkins brand (made in usa) I haven't tried before but it looks like a plain simple extract. "Vanilla bean extractives in water, and alcohol". 2 oz bottle for $4.99 (a dollar off regular price). It actually works out to about the same price per oz as the Costco bulk buy, but daunting to buy 16 oz at that price, and only use it over years. The ClubHouse brand (more mainstream here) was the other alternative, a 1 oz bottle at $8.99. My old Kirkland bottle says the same ingredients as Watkins, but has sugar added as well.

Bought two fresh slabs of pork belly today.
Went the store to get pasta and tomato sauce and bought pork belly instead.
Now I can make bacon.
I might eat one whole slab and a dozen eggs for Christmas dinner.

Dreamed up homemade steak sauce.
Mayonnaise homemade ghost pepper sauce kitchen bouquet homemade mustard and malt vinegar.
This really brought out the flavor of the ghost peppers big time without a lot of heat.

Chicken fricassee with potatoes, eggs and of course fried chicken. They go together like peanut butter and jelly, the salty crispy crust compliments the rich gravy.

I remember Kitchen Bouquet from when I was a kid. Probably still one of the best ways to make gravy, although I never use it. I just rarely make gravy. But it is the gravy I grew up with. Yum.
