Default That Time Has Finally Come

At that time of the growing season when all good tomato growers should be canning tomatoes and tomato sauce, I am always too busy. We find just enough time to grind our tomatoes and put the juice in freezer bags and into the freezer. We always eventually find the eventually find that perfect weekend to boil it down and can the sauce. Well this snowy weekend is the one. It will take two days to reduce it all and we’ll be putting up some nice thick sauce in jars by tomorrow

You wait until it's cold out and make it cozy inside- good thinking!

It does smell great. Started off with about 48 quarts of juice an reduced it to 20 quarts of thick, delicious sauce. It is nicer to do it in the cooler weather. Many times it still quite warm at the end of the summer. Too warm to spend a weekend over a hot stove. It is worth it though.
Had to try it out for supper tonight. Spaghetti with venison meat sauce. Fit for a king.

I just made some sauce from the "frozen grind", and something went horribly wrong.

While it smelled like summer, it was the worst tasting sauce I ever made.

I'm thinking I forgot to strain out the seeds before grinding, as the finished sauce was very bitter.

I like the seeds; you can nibble them one by one forever. Never had "too many".

Tormato, your sauce ought to be chock full of fiber!

I’ve done this with frozen juice for a few years now and never had a bitter result. I run my tomatoes through a mill before freezing. There are no seeds in the juice. Also I don’t heat the tomatoes before squeezing. They are run through the mill raw.

So there is no canning? Just freezing?

There is canning. I ran tomatoes through the mill in August and September. I froze the juice until this past weekend. I boiled the juice down until the sauce was nice and thick and then canned.
