Yes you can trim back all the leaves.then new growth ahould emerge from the center.

I brought mine in last week for the winter.
The smallest poof, not much more than a fist-full, needs lot of pot space. My international grocery has it fresh for quite cheap so I'm not sure why I still try and grow it every year.;...a challenge even though my pups love it like kitties like wheat grass. (cat-nip) |
