Default Coyote Tomato Seeds Ferment or Air-dry?

I am growing coyote tomatoes this season and the fruits are getting ready for harvest, I'm not sure whether to ferment the seeds like all tomato varieties or to just air dry and store them, as most people have described the taste as sweet berry than a tomato. I'm not sure whether seeds can be fermented in a sweet tasting juicy pulp.
