Default smoke dried san marzano tomatoes

I am thinking about smoking and drying some san marzanoes, and wonder does anyone have any knowledge or advice?

i smoke a lot of juliets each year... i sell them still "moist" to restaurants or fully dehydrated at market. they are fantastic in salsas.

my preference is to cold smoke them and do the drying in the dehydrator. slice in half, salt lightly, smoke.
