Tonight I made a savory squash pie.
1 large Kabocha squash
3 eggs
1 shallot "finger"
1/2 tsp cinnamon
3 sprigs fresh thyme
1 cup fresh ground tri-tip steak

That looks delish Richard, love the color of the pot--is it Martha Stewart brand?

Delirium, I was gonna post about kabocha in curry but you beat me to it! But not the same kind. I use it in place of potatoes in lots of dishes, including a basic curry with meat and vegetables. Kabocha is also one of my favorite tempura ingredients. I'm getting hungry so I'd better stop here.

It's a Le Creuset 5.5 quart French Oven. They were on sale at the Good News cooking store last summer.

I love sweet potao curry. I bet kabocha curry would be awesome! Do you blanch or cook squash,first?
What kind of curry to use for curry?

I cut the squash into manageable chunks, steam it on high pressure for 2 minutes, then remove the skin -- which at that point is about as soft as a wet paper towel. I then put it in the KitchenAid mixer with the blending paddle and mix in whatever ingredients are desired.

The squash is sweet and needs no sugar added. It has a "durable" flavor; i.e., if you are meek about the ingredients you add then you will not taste them.

I have made curries so many times that I don't use a recipe anymore. I open up the spice cabinet and put a set of jars plus some fresh herbs from the garden on the counter. Then when I'm happy with the collection I've assembled I add them to the mixture. Generally my choices are dictated by which herbs from the garden I have not used recently.

Does a lot more than that ... it's a Fagor 4-quart Slow Cooker Express.
