Made a couple test loaves of Irish Soda Bread with raisins... It's good! Plain soda bread tomorrow...

All this talk about corned beef got me thinking that one of my next smoking (as in BBQ'ing) attempts could be a brisket. They say a brisket is the hardest meat to get right, requiring the longest time (~10 hrs+), low and slow.


I cheat. Given that brisket is quite the investment these days, I don't want to chance it. I cook it Sous Vide for 30 hours at 155F, chill it (can stay refrigerated for up to a week), then hand it off to my husband for three hours in the smoker at 275F. Perfection every time!

That's about what I'll do. My notes from last year was 150º 26-28 hours.
Excellent. But may try 155º. Packer cut, then into three packages. SV all three,
then chill and freeze two for later. Into the smoker goes the center flat piece. 3 hours.

This is an Irish immigrant tradition decades old. The Irish settled in neighborhoods/communities
along with the Italians, Jewish deli owners, etc...all providing affordable provisions....
traditions that obviously needed an embracing of additions and substitutions. My Irish friends,
most moved to NY after University in their 20's, adore this American tradition even though they
did not necessarily have CornedBeef on their plates as children.

Where I worked at they got on a corned beef thing.
Problem was no one knew how to cook it.
They cut it up in chunks raw put in on the griddle and served it.
It was like hard rubber balls and salty as all get out.

Two briskets in crock pot. Potatos--only russets left at store--waiting along with carrots and onions. My kids usually steal all the meat and leave much of the veg behind. lol

Got mine.
And some of the best potato salad I have ever had in my life.
Made up the recipe today.
White vinegar.
Sugar.
Mayonnaise.
Sour cream.
Dill relish.
Dill weed.
The red stuff is sweet and sour cabbage with half cooked apple.

Had my corned beef tonight ... CROCK POT all day long with the spice packet that comes with it, mustard, beer and club soda... falls right apart ... great every time!

Picked up a corned beef at Aldi's half price today. Thanks, Rhines81, I never thought of cooking it in a crock pot before. I read your post and even though it is 1:30 in the morning, timing was perfect. I put it in the crock pot with carrots, onion and a bottle of stout. It should be ready in time for lunch tomorrow. Or maybe even a late breakfast with eggs. Hope it turns out well. I don't drink beer and that bottle was probably a year old, lol. I was told it was unfit to drink any more. Well it was still fizzy and foamed up when I poured it in, so hopefully it is still fine for cooking. I guess I will find out. How long do you think you can keep an unopened beer and use it for cooking? There are no dates on the bottle, so I don't know how beer drinkers know how old the beer they get at the store is before they drink it.

Good beer gets better with age in the refrigerator I have had one that was 3 years old.

I just tried some and I am not impressed. I expect corned beef to be a little salty, this I feel like I need to add salt to. Who ever heard of corned beef that needs salt? I wonder if it would have been better if I had just cooked it in straight beer. I added quite a bit of water too, so the meat and veggies were just covered. I didn't rinse the meet out of the package. Oh well, it will get used, just a little blander than I expected. I usually buy a brand called Mosey's and this was Aldi's own brand I think. Never heard of it before.

Cant remember the last time I even bought corned beef.
I think a good boneless chuck roast would make good corned beef.

The three year old beer was Tilburg's Dutch Brown ale

The art is from the Garden of Earthly Delights a painting from around 1490.
I painted something like it in art class without ever seeing this painting and got called into the principles office and my three paintings were banned from the art show.
My mother was even called in to have a (((discussion about me and my mind)))).
It was the talk of the school.
I was then and am to this day very proud to have had my works banned from the "show".
