Storing sauce tom until enough for processing
Probably the wrong forum for this and I apolagize (sp?).
anyway... This question is for feldon if he is around. If anyone else can help please do. . I have some purple russian toms that are going to get bad if something ain't done with them soon. Want to make sauce. I don't want to make 2 oz at a time. Is there a good way to freeze/store them until I have enough to process? Thanks,Tim |

You can just stick them in a ziplock bag in the freezer as they ripen.

Tim, whole ripe tomatoes freeze very well - I just rinse them off, dry them, pop them into freezer bags and freeze them solid. They can them be taken out of the freezer, run them under water and the skin slips off, then they are perfect for sauces. Be sure to remove any bad spots, however, and don't freeze tomatoes that are on their way out.

Freezing is definitely the way to go, rather than storing them in the refrigerator.
