Well, Good Friday dinner looks like catfish and succotash!

We have a Virginia ham for Easter. Happy holiday to those who celebrate . . . the start to Spring for those who don't!

We don't have the complete meal planned yet, but it starts with:
Slow smoked brisket
Deviled Easter eggs
Roasted corn on the cob
??? and/or maybe a homemade cheesecake.

There is an elote stand/trailer at the Mexican store where I buy my Mayocoba beans at one of my job sights in Del Valle.
I personally would forgo the mayonnaise and go with a fresh farmers cheese/Queso Fresco/blanco instead or even sour cream.

The whole Easter meal has completely slipped my mind as I had no idea it was Easter coming up.

All I have had my mind on is work.

? The internet is telling me elote is corn on the cob. What's with the mayo and/or cheese?

Easter dinner will be spiral cut ham, au gratin potatoes, home-grown yellow roma beans almondine, and some sort of fruit crisp.

Yeah just take your regular grilled corn on the cob with charred kernels and add a little chili powder and sour cream or queso fresco.
Maybe add a sprinkle of Mexican oregano.
Maybe some hot pepper powder or habanero too.
Nothing special at all, your choice.
The recipes are as numerous as there are Mexicans and Gringos alike.
But lime always lime.

I had fish and chips for supper tonight. Beer battered pollock out of a box, but man is it good. They used a real beer to make that.
No plans for Sunday yet. Mom usually invites us to Easter dinner and then I complain that there's no chocolate bunnies. Just like xmas, easter is best for kids.
