Long video but this was last weekend.


Fast forward to 9:58 to get to the Firepit



Fast forward to 15:04 to get right to the cooking.


Ribs came out great, I was bit worried because I charred the bottom of one of the racks but SURPRISINGLY it didn't affect the quality at all, That's the rack I cut first in the video because I was panicked I messed that rack up.


Try to watch in higher resolution because you really can't tell to color of the ribs in lower res.

Totally agree on the 3-2-1 not a fan, if you're gonna foil 1 is more than enough, the last 2 can be firming and saucing.
If I do foil, I foil in a steamer pan, one hour MAX!

Rajun I had to laugh because I am already subscribed to your channel not even knowing that it was you. I should have guessed. I must confess that due to your images posted on this site of your fantastic cooking, I had to go and get myself a smoker. Thanks to you, I just love it!

Thank You for the complements!!! I hope you enjoy the cooking videos and I plan on doing more.

What kind of smoker do you have? I hope it's been working for you. Smoking is an art as much as the journey but the destination is worth the time to do it right. Once you figure it out and find what you like it's hard to beat the flavor of fresh smoked meats.

I have the small Traeger. I got it for a steal. It was the demo at Costco so and already put together. Yay! It is small but all that I need. While new to smoking, I am an accomplished cook so the first thing I made was a pork butt marinaded in maple syrup, hot pepper flakes and whiskey. It was great! So far everything has been very good.
Love your channel and will be watching for more.

I got up this morning at 3:00 AM.
Had coffee and took off to the store at 6:00 to beat the rush.
Since this is about Old school BBQ and not smoking in the offset I am posting it here.
Picked up two packages if the cheap chicken thigh leg combo things.
And the pork brisket strips and a pack of three rib eye steaks bone in.

MissS, I want you to try Shake-n-Bake chicken wings on the smoker, They come out great! I cooked them at 375.

Salt, I'm glad you found the button to get to all my videos!
