Tamales or Flour Tortillas with that batch of lard would taste...well, you know. Strong work, those bottles are quite nice.

The 119.99 is sounding better methinks.

Hellmans: 250+ kilos of hog, and big chunk of that marbled. Wow, so many choices. Carnitas on tomorrow's menu!!!

Worth, Take a whiff of fresh coffee beans/grounds. It cleans out the smeller so you can smell anew. It works like a charm. I went to a scensty party ( a home party that sells scented waxes for electric airfreshener thingy's) and in between smelling all the smells she had us take a whiff of coffee beans to get the fragrance smells out of our noses.

I had tamales on my mind when I made the lard.
Interestingly the store only has this fat during tamale season.
The fat was over by the variety meat section, this area predominantly serves Mexican Americans and people like myself that is a dying breed.
Three of these so called meats have made it over to the prime section of the meats, tails shanks and short ribs.
Also the fat was sitting right next to the fresh Masa for tamales.
In a few days before Christmas they will have piles of the fat back out for even less.
You might even see hogs heads out the king of tamale fillings.

Thanks Carolyn it worked.

Here is about one and one half quarts of smoked salt.
What a worthless time consuming venture.
It rained last night salt being what it is I brought it in and dried it in the electric oven before packing in containers.
I also read on another foo foo site saying you could use their highly expensive smoked salt to cure meat.
Are you kidding me not a chance.
What like one piece of bacon.

I tied it with some chocolate kisses this morning it was good.
I am going to put some in some home ground brisket I have thawing out.
I dont think I have had red meat in over a week.

Here is the scenario.
You were up late you went to bed and left three slices of onion out overnight what would you do with them?

Here is what I sometimes do, I dried them and added them to the ground brisket along with the smoked salt and one egg.

That is about the way I did it but I will never do it again.
One because I have a quart and a half of it now, I will never use up that much smoked salt.

Not sure why, but just upgraded to Yosemite on my MAC and now can't see any of the pics. Hmmmmm.... bummer. Going to have to do some troubleshooting.

Tamale season soon. Mom makes good ones. Pork, Beef, and sweet ones, Sonora-style.

I still haven't posted on flour tortillas, 'cause if I make I'll eat them, and nobody likes Fat Elvis. Besides, tips on playing with flour are superfluous in your case. I'm still having biscuit cravings...

I ate a sausage biscuit once a day they kept fine in the fridge In a Ziploc bag.
Most of the time as in today the crows got to eat.
I have several that hang around.
The tamale is my all time favorite food from the southwest and Mexico.

Crows are settling around here and displacing everyone, big time.

The quest for the perfect tamale is reason enough to travel around MX, too bad it just isn't feasible right now, or probably the next decade. Corn wrapped ones are the gold standard for me. Sometimes, when all cylinders are firing, banana leaf ones win. And for those you have to go south.
