we do not do a second cutting on the pea shoots as i think the product does not look as good then. for at home use you could cut multiple times with no problem- as Shawn said a bit of a fertilizer boost would be helpful with that.

dwarf grey sugar is the variety to use for shoots/tendrils/greens... if you can't lay hands on that snow pea varieties generally are preferable.

I just use the 'normal', local staple peas from the grocer's. They also are the most reliable ones to grow peas outdoors. Some of the fancy seed peas don't even germinate, grrrr.
