I use my pressure canner for Salsa and tomato sauce. I add veggies so I pressure can. It sounds like the salsa was over processed to me. reduce the time and it should be fine. I think I do mine for 15 min but would have to look up the recipe to be sure. I use the Annie's Salsa Recipe with the instructions for pressure canning since family does not like a lot of vinager taste in the salsa. Now as you can see everyone has their own way of doing things and the way you can will be up to you. I think it is great to see a new person take on this adventure! Let us know how it tastes!

I followed the directions that came with my Presto pressure canner and didn't have an issue. I was a bit suprised they recommended hot water bath for salsa. I followed their directions and boiled the salsa for at least 10 minutes, put it in the warmed jars, then did the hot water bath for 15 minutes. That's a long about way to say to perhaps check the instructions in your owner's manual.
Good luck. Randy p.s. BTW, being old school I use citric acid instead of lemon juice. |
