I miss my cabinet shop days.
Our main woods were oak, ash, hard maple, then there was walnut, cherry and alder.
I ran the raised panel door department and set up and ran the molder.
I had a never ending supply of wood to cook with.
The double cutting miter saw cut out little 2 inch triangles for door frames.
The molder made perfect wood savings.
Due to not having AC in the old houses I lived in all of my cooking was outside in the summer and most of the time in the winter.
The year 2000 was the first year I lived in a house with central heat and air.
So that is a lot of days and years worth of cooking and smoking with wood.

If I were rich and had a house built the kitchen and dining room would be in a separate building with an enclosed walkway to it..
With smoking chambers to boot.

If you can get it, apple wood may be real good on the fruity type flavored peppers.
