i slice them then put them in a dehydrator, when dry and hard i put them in a krups coffee grinder until it gets as fine as i want it----tom

Yes they are canned fresh not pickled.
Very tasty too, but pricey.
You can get rocoto peppers the same way.
But they sell manzano fresh from Mexico.
