Default Rusted Garden (Gary Pilarchik) Tomato Salad Recipe

Tried this recipe that Gary from the Rusted Garden Posted in his last video, he calls it Tomato Salad.

I don't like cucumbers but my parent do. Mom is always making cucumber salad. My daughter was making dinner last night and my parents were over so I decide to try this recipe.

I was able to stomach a little only because of the vinegar and oil flavor. My parents of course loved it, my niece only liked the cucumbers and everyone else did not like it, but that's no reflection on the recipe since we don't like cucumbers, well, except for my daughter but I'm sure Cucumber fans will enjoy this recipe.


But the picture looks good.










Ingredients

  • 2 cucumbers slightly overripe
  • okra 3 small pods
  • 1 red pepper small
  • 3 medium tomatoes
  • 2 medium onions
  • teaspoon minced garlic
  • red wine vinegar
  • white vinegar
  • salt
  • olive oil


In a deep bowl


  • Peel cukes slice and toss in a bowl
  • slice onion, thin but not paper thin toss in bowl
  • salt lightly and set aside




Using another bowl

  • slice okra 1/8" slices add to bowl
  • fine chop peppers add to bowl
  • slice tomatoes 1/4-3/8" thick then cut into strips add to bowl
  • teaspoon minced garlic add to bowl
  • sprinkle pepper on top


by this time 15 minutes should have passed



  • toss cuke, and onion mix squeezing and pressing as you mix.
  • Toss the other veggies in the bowl.
  • add a few tablespoons of each, olive oil, red wine vinegar and white vinegar, add some Parmesan cheese and mix well.
  • serve at room temperature topped with a bit more Parmesan cheese.
