Default Fall season options for LI, NY area?

This is interesting. I live in the lOng Island, NY area and my cucumber plants all look like they have had it. The plants are all drying out and dying. They don't owe me anything. We must have had 100 lb of cucumbers this summer.

At this point in time if I remove the plants, what can I plant in their stead?
