Because of an early hard freeze, we've had to pick almost all of our hot peppers, lest they freeze and become mush.
![]() The question is: will the saved seeds from nearly ripe peppers be viable? I don't want to take the time to save these seeds and then share them with others IF they aren't going to sprout. If there IS a chance of the seeds being OK, do I need to wait until they're totally ripe? Also I've been asked if peppers are like tomatoes in that seeds of green fruit should sprout. Could this be true? |

1st let the more mature peppers sit out on the counter/in a window or in a brown paper bag and let get get ripe soft and starting to wrinkle.
2nd some peppers seeds will grow from a green pepper and others will not. you may try posting the types of pepper you are questioning. I am no pepper expert but have read several post and tried this with a few myself.

I've found that the seeds will continue to mature as the pepper ripens off the plant. I assume the seeds would mature faster on the plant, with more resources available.
