Depending on the variety, it is normal. If you're lucky, they'll have long stems, too!

Yes, it depends on the variety. There are several that are intended for cutting and those have several flowers on multiple branches. Sometimes they have one big flower and then smaller flowers on the side branches. Some of the older, really tall varieties just have one flower at the top. Do you remember which variety this you planted?

O.k. so now what do I do? How long do I leave it there? Will the birds attack it? How do I dry it out so I can eat them?
