Default Tomato Pie

Made my first Tomato Pie ever. Thought I would share.



Ingredients:
Tomatoes (Black Krim, Green Zebra, Anna Russian, Borgo Cellano)
1 Vidalia Onion
1 Block frozen chopped Spinach (can use fresh)
1 Block of Cream Cheese
1 head of garlic (peeled and crushed)
1 redi made pie crust
Feta Cheese
bread crumbs
shredded mozzarella cheese

Place pie shell in tin
Soften or melt cream cheese and mix with garlic
Spread cream cheese mixture into bottom of crust
add layer of tomatoes (sliced)
layer of spinach
sprinkle feta
another layer of tomato
layer of onion
sprinkle feta
another tomato layer
sprinkle top with mozzarella shreds and bread crumbs.

Bake 350 for 45-60 minutes.

I loved every bite of it. Very Garlicky... mmmm tasty

I made my 2nd pie last night.

This time a little varietion:

3 Black Krim
1 Amish Paste
1 Green Zebra
2 Borgo Cellano
1 Big red one (dont know the name)
1 block cream cheese with 3 cloves garlic and seasoning (basil & oregano)
2 x summer squash
1/2 vidalia onion minced
2 cups mozzarella cheese and panko bread crumbs as the topper

My wife went for 2nds... She normally doesnt eat tomatoes.

Sounds wonderful. Hmmm... I wonder if I could substitute my Swiss Chard for spinach... I bet so...

The wife and I love vegetarian pizzas and we are not vegetarians. We fell in love with a veggie pizza Applebee's restaurants used to have on the menu. It was primarily a spinach pizza without tomato sauce, but with mozzarella cheese on a large, baked, flour tortilla.

We started using any large flour flatbread like tortillas and constructing our own veggie pizzas at home. We never make identical pies to the last ones we baked because we vary the ingredients so much. While spinach and mushrooms are usually included, the primary flavor theme is provided by the tomato slices. Using different varieties, we are able to achieve different tasting pies. Thinly shredded herbs like basil also provide a variety of tastes. While I do love onions, for some reason; they don't seem to enhance the pies. Other ingredients like capers, olives (black and green), peppers, and any thing from the garden can be used. The really nice thing is the fact that they provide a tasty, nutritious meal in just a few minutes in the oven.

Tokizy, thank you again for sharing your recipe. I made it last night, it was wonderful. My husband was a bit skeptical but after the first bite he was sold.

Ted, I'll have to try your recipe approach too!
