I gave a case of my heirlooms to a young lady who is a chef and who's worked for a very popular restaurant in Louisville, KY. She was so kind to bring me a sample of her work back to me! It really was the very best tomato dish I've ever had in my life! I cannot figure out how to publish the pictures, but I assure you - this young gal has it all going ON!

I had never even heard of a gallete until my daughter recently sent me this recipe! I haven't made it yet but it looks delicious. Is it similar to what you had?

I love making fruit galettes, especially peach galettes. So much faster and easier than a pie, and only half the crust of a pie, which also cuts the fat and calories. But that picture is one messy looking galette. Bet it tastes good, though.

Oh SueCT, I like your thinking about gallettes being just half the crust of pie so cuts the fats and calories. But I thought that picture was wonderful, I almost licked the screen it looks so good. not messy. So wish I had several large different colored tomatoes right now to go make it.
