2 cups self-rising cornmeal
1 cup self-rising flour
1-1/2 cup buttermilk
1 dozen medium/large brown eggs
3 sticks of unsalted butter
4 medium celery ribs
1 large onion
3 cups chicken stock
2 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 medium cloves garlic, minced
1 teaspoon minced fresh thyme leaves
1-1/2 teaspoon dried sage
1 tablespoon poultry seasoning
2 tablespoons minced fresh tarragon leaves
1/4 cup minced flat-leaf parsley leaves
1 pound sweet Italian sausage
1 quart oysters
