Just like it sounds, you take ground meat and make a ball trying not to work the meat too much. Season the bottom and put it on a griddle or cast iron pan and smash it flat. It makes a nice crust of beef if the pan is at the right heat. To me this is just like the old time burgers we used to get at diners.
