I did red beets this year down the middle of a double row of peppers. Both did really well. I'll keep sweet potatoes in mind for that as well. I grew too many beets this year...next year I need to diversify my roots. Rutabagas and maybe fall turnips are my ideas so far.
This year I coplanted sweet potatoes slips with a bunch of different crops (corn red beets broccoli cauliflower cabbage lettuce) but most spots shaded the slips too much for too long. And some spots just didn't get enough sun, period. I'm trying to decide if the peppers would shade them too much as well. We just get a lot less powerful and lower sun up here.
The red beets loved the shade during the heat of the summer, and really complemented the sweet peppers in a florida weave double row. I'd have to check but I think I seeded them sometime after pepper transplant. I guess sweet potato slips could go in at that time instead.
I was leaning toward them having their own spot again to get them to full output.
