Warren, you could take the onion out of this recipe and sub more corn, which would make it sweeter.
8 large tomatoes, peeled and chopped
2 teaspoons butter
2 small onions, chopped
1 green pepper, chopped
1 lb. okra, ends trimmed and sliced
corn cut from 3 ears (or 1 cup frozen corn, thawed)
2 teaspoons sugar
1/2 cup dry breadcrumbs
Heat the butter in a large skillet and saute tomatoes, onions pepper. Add okra, corn and sugar and simmer 25 minutes. To thicken, add breadcrumbs and stir well.
