I’m only growing 3 varieties so not much color variation here. Three plants give the two of us far more eggplant than we can possibly eat, even doing things like baba ganouj for parties or just snacking. I’ve been experimenting with some to try to emulate the best Thai eggplant recipe I’ve ever had from a restaurant in San Francisco. I've wasted quite a few that way
