Thanks, folks. I appreciate your help. Today, I was at the store and purchased the following:

Duke's Real Mayonnaise
6 beautiful Limes
6 beautiful Lemons
Gallon of Apple Cider Vinegar

We will begin some experiments that will include adding various fruits and other suggested favorites. I've decided to search for and find one recipe that fits my "Good Taste" standards. That's the same standard that I apply to all tomatoes. It should be a "happy" taste.

I will also try different Mayo's during my testing. My DW has always liked JFG which is a local brand name started by local celebrity Archie Campbell. When I get done, I'll post the recipe I ended up with, including basic salt and pepper, etc. additions. I also intend to include regular white vinegar and "No Vinegar" experiments. I will be starting several cabbage plants this year to include red cabbage. I will try adding such things as:

Diced onion
Diced scallions
Diced/shredded carrots
Diced sprouts
Perhaps some diced tomatoes

Others as research and testing point to.

Well, thanks again and I believe you can see where my plan will take me. We're going into this with a completely open mind and an analytical methodology.
