Well as a Lebanese - we make a cucumber salad with garlic, salt, fresh or dried mint and cukes. Smash the garlic with salt, mix it in yogurt - preferably a thick, greek style yogurt. Peel and cube cucumbers, add some pepper, mint and you're good to go. Remove seeds if the cucumbers are seedy.
You could salt the cukes first - we never did because we made it and ate it pretty much right away.
It is delicious and a good way to use up those cucumbers.
