for a largeish salad, I am not great at measuring but here's what I do:
about 3/4 cup mayo
2- taste tbsp sugar
1 tbs white vinegar
1 tbsp water
1tbsp fresh lemon or (even better) lime juice
1 tsp grainy mustard.
pepper to taste, extra salt if you like. can adjust the sugar to taste.
I find using part citrus instead of all vinegar gives tang and flavour without just the pure vinegar sourness.
adding something like sweetened dried cranberries or chopped apples sweetens things up as well
everything is approx because I dont measure really... but a starting point you can try and then adjust to what you like.
