Dont give up on beets, I am with you on the dirt flavor, cant stand it, but they are beautiful and delicious.
Boil them slip the skins and dice them.
Mix the cubed beets with a pinch of sugar, pinch salt, and a splash of vinegar and leave them in the fridge for half an hour or more.
This partially pickled is my favorite. Eat them as is or use on fresh greens with goat cheese.
Dirt flavor is gone 100%
