Roasted Red Pepper Dressing
1 roasted red pepper, peeled and seeded
1 clove garlic
3 tbsp white wine vinegar
1/2 tsp fennel seeds, toasted
1/4 tsp granulated sugar
1/3 cup olive oil
Fresh black pepper to taste
Salt to taste
1. Put all ingredients except olive oil, salt and pepper in small food
processor or the bowl attachment of a hand blender. Puree.
2. Transfer to a small bowl. Stir in olive oil. Season to taste. Chill until
serving time.
