My Tomato Sauce from ‘07
· 24 Roma type tomatoes heated until skins crack/then strain with Victorio Strainer
· 1 (6 ounce) can tomato paste (to thicken)
· 4 tablespoons grated Parmesan cheese
· 1 teaspoon white pepper
· ˝ teaspoon onion powder *
· ˝ teaspoon dried oregano *
· ˝ teaspoon dried marjoram *
· ˝ teaspoon dried basil *
· * OR just use 2 table spoons of Mrs. Dash Tomato Basil.
· (I add a sprinkling of additional basil to the heating sauce)
· 1/8 teaspoon crushed dried red pepper flakes
· 4 cloves crushed garlic
DIRECTIONS – (the tomato paste is added last)
1. In a medium bowl, combine Parmesan cheese, spices or Mrs. Dash, white pepper, and red pepper flakes.
2. Mix together; break up any clumps of cheese. Then blend into the heating tomato sauce. Add garlic, stir, then add tomato paste.
3. Simmer 30 minutes, let cool and freeze into the container of choice.
