The greatest recipe in the food universe!

After two or three years with no garden and never finding the one essential ingredient that met my criterion, I NOW have totally enjoyed the one thing that makes me happy in ways that NOTHING else can touch..........

Take two slices of finely grained, pre-sliced white bread

Take one perfect tomato and slice as you wish.

Sprinkle the tomatoes with a very light application of salt and black pepper.

Apply your favorite plain mayonnaise liberally on each slice of bread.

Put the tomatoes on the mayo and put the two sides together.

Contemplate the beauty and unctuousness.

Take a big bite.

Experience a bit of heaven!

While I can cook virtually any cuisine or dish, THIS is the most perfect food in the World!!! No herbs, no spices, no oven or cooktop, no delay, no complex techniques...just pure culinary perfection.;)

I've been eating tomato sandwiches like that since I was a kid.
It's fast and perfect in it's simplicity.
Bacon is nice but you have to cook.

Just about the best way to enjoy a tomato! And I hope it's just the first of many more to come.

I take it one tiny step further.... you just can't eat them too often if you have to watch your fat intake. It does require toasting the roll or bread on the stove, but that's it for cooking.

First, dig the mason jar of saved bacon fat out of the back of the fridge (you all do save your bacon drippings, I hope!). Smear one side of the bread (either both pieces or just one if you prefer a lower fat version) with just enough bacon fat to lightly coat, then place fat side down on a hot pan or griddle. Once toasted, remove from heat, allow to cool slightly, spread the toasted side with mayo, add a well seasoned tomato slice, and enjoy.

I treated my husband to one of these "bacon-less tomato and bacon" sandwiches last week using a purchased bi-color heirloom (from Whole Foods, and it had an impressive flavor for what I'm guessing was a greenhouse grown fruit).

This is often my breakfast during tomato season, but it was the first time my he joined me for one of these. He couldn't stop grinning between bites!

I can't wait to make them again, but hopefully with one of my own tomatoes next time.

I do live BLTs, with or without the B. It is way too expensive, usually.

That is a good idea with the bacon grease - umm I mean essence of bacon, as the pretentious cooking shows call it. We just used up the rest of ours, though. Straight venison, ground, mixed with bacon fat, seasoned, and then grilled on a aluminum grill tray is how we use up most of our saved bacon grease. I like them better than beef, not near as greasy and taste great.

It's not called bacon grease, it is EVBO, Extra Virgin Bacon Oil.:yes:

Barely ignoring the pun, mine nucle in later life developed a heart condition and had to ban all salt. On his sliced tomatoes instead he used ground black pepper. He would say, "You use enough pepper and it tastes like salt."

I dunno about that, but pepper on tomatoes is pretty good. Even my SIL and my brother (who is like Mikey) thought so in my recent dwarf taste fest.

Definitely one of those guilty pleasures you can only splurge and have once in a while, or once in a very great while depending on ones health situation. Heart disease, strokes, etc. are pretty much non-existent in my family gene pool. Not the case with my husband's, so he won't be treated to this delicacy too often.
