can I use defrosted peppers to make hot sauce?
 
I had some mildly hot peppers that were in the freezer so that we could add a small piece at a time while cooking. Unofrtunately, my partner did not return the container to the freezer. I now have a container of defrosted peppers that are too hot for us to eat in one meal, and I was wondering if it'd be safe to buzz them in the food processor with some vinegar to make some hot sauce. Or other ideas?

I think I've done that. If you use a good dose of vinegar it should last 6 months in the fridge. I've smoked them after defrosting too.

Drain well first then cook your sauce as normal. I think it should be fine, although I've not done it I see no reason why it would not be as good as fresh.

It will be just fine i do it all the time. Its how i make hot sauce in the winter.
